Chia Bounty Pudding with Salted Caramel

Are there any coconut lovers here? This is seriously one of the most delicious things in the world. This Chia Bounty Pudding with Salted Caramel tastes exactly like Bounty chocolate bar (even better) but it’s dairy and gluten free! It’s insanely good and super easy to make! Just gorgeous!

Chia Bounty Pudding with Salted Caramel

I don’t know about you but I love everything coconut. It just reminds me of summer, blue sky and sun! And this simple treat or breakfast (because why not?) is like a little paradise in a bowl (coconut bowl of course). It tastes like a Bounty chocolate bar but it’s gluten and dairy free!

But the best part about this coconut-chocolate chia pudding is the salted coconut caramel. It’s the star of this pudding. It’s seriously the best caramel I have ever tried. And it is sooo simple to make! You just need 4 ingredients. That’s it! It can stay in the fridge for up to 3 weeks, but I’m 100% it will disappear before. It’s AMAZING!

To have the coconut flavor, you need to add shredded coconut. I used a fresh one, but any shredded coconut will work. The most important thing is to roast it on a dry pan. It tastes totally different. Way better. If your shredded coconut is sweetened, it’ll roast very, very quickly so be careful to not burn it!

Make it your own

I’m using almond milk for this recipe, but you can use any milk you want – soy, coconut, oat, rice… just to name a few. I love to add blueberries on top because they perfectly balance the flavor, but you can use other fruits too! How about raspberries? Beautiful!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 20 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

  cup Almond milk
 2 tbsp Chia seeds
 3 tbsp Shredded coconut
 Dark chocolate
 2 tbsp Blueberries
 2 tbsp Coconut salted caramel

In a bowl, mix chia seeds with milk and put it to the fridge. Keep it in the fridge for at least 1h - until the liquid is absorbed. I usually prepare it a night before.

Heat the pan and add shredded coconut. Roast it stirring often. It will take around 1 minutefor sweetened coconut and around 3 minutes for unsweetened one. Be careful to not burn it! Add it to the bowl with chia seeds and milk. Mix.

To serve, chop chocolate and place on top of the chia pudding, add blueberries and 2-3 tablespoons of coconut caramel. I like to add the warm/hot caramel because it melts the chocolate. It's delicious.
