Ham Cheese And Asparagus Frittata

Frittata is a great way to use any leftovers you have in the fridge! You make this egg omelet with whatever you want! Chicken, ham, bacon, sausage, smoked salmon, different veggies… no strict rules!
For this version, I went with ham, cheese, and asparagus. I love the combination of asparagus and ham, and when mixed with cheddar and eggs, it just tastes amazing! I put some thin slices of tomato on top, but honestly just to add some color. It doesn’t add much flavor.

Frittata can be made totally on the stove or in the oven, but I prefer to start with frying the ingredients on the stove and then transfer them to a baking dish to finish cooking in the oven. First, because I don’t need to flip anything (I know when my omelet would end up…), and second I just like to be sure that the eggs are cooked through evenly. I wrote that I transfer all the ingredients to the baking dish, well if you have an oven-proof pan like a cast iron skillet, you can make everything in one pan, without using a separate baking dish!

How to make it

  1. Preheat the oven to 180 Celsius degrees.
  2. Chop the ham and asparagus.
  3. Fry the ham and asparagus for a few minutes to get a nice caramelization.
  4. Whisk the eggs in a big bowl and add shredded cheese and a little bit of milk or cream.
  5. Mix everything together and transfer to the baking dish.
  6. Nake the frittata for around 35-40 minutes – until the center is set.

It’s very simple and you don’t need to put much effort into making this dish! This frittata is so good that I like to eat it just like that, without anything on the side. But if you want to, serve it with a simple salad!

I like to make frittata a lot because it reheats well, and you can keep it in the fridge for a few days without problems! Such a time-saver!
