Fun, easy and delicious Puff Pastry Tart. Perfect for breakfast, brunch, or lunch! Well, you can make it for dinner too, because why not?! Made with store-bought puff pastry will be on your table in less than 30 minutes! Golden pastry, flavourful prosciutto, and runny yolks gorgeous!

Puff Pastry Tart

This is a fun and easy recipe to make! The flavors of mozzarella cheese, prosciutto, and egg combine beautifully together. A super delicious idea for a light meal! Something different than a usual ham and egg combo!

This gorgeous tart is made with store-bought puff pastry so the preparation is simple and quick. I prefer to make one, big tart instead of a few small ones but it’s totally up to you!

What you need to make this Puff Pastry Tart:

  1. A sheet of puff pastry.
  2. Prosciutto – I love it! But you can use any other ham you want! Or bacon!
  3. Eggs – to keep them in place, shape the prosciutto to prevent eggs from running.
  4. Mozzarella – or any other cheese you have and like! As long as it melts well!
  5. Tomato sauce/Sour cream/Pesto – a little bit of something to spread as a base. It adds extra flavor!
  6. Black pepper and salt– to season the eggs!

I love how beautiful and fancy it looks like even though it’s made with a few, simple ingredients.

I kept this tart very simple, made with just prosciutto, eggs, mozzarella, a little bit of tomato sauce. But there are so many different options! You can totally add some veggies like asparagus, spinach, tomatoes, or zucchini, or olives, sun-dried tomatoes, or even figs. You can switch out the prosciutto with salami, ham, bacon or smoked salmon. Lots of possibilities!

How to make this Puff Pastry Tart

The recipe is simple, but there are a few steps that guarantee the best results:

  1. Start with pre-baking the puff pastry. The pastry should be placed on the pieces of baking paper. Don’t place it straight on the baking tray or don’t use the aluminum foil instead – it will stick really hard!
  2. Spread some tomato sauce/sour cream/pesto as a base. It adds more flavor to the dish. I used a few spoons of passata (tomato puree) mixed with herbs.
  3. Shape prosciutto in a way that will prevent eggs from running.
  4. Be careful with the timing – you may want the egg yolks to not be fully cooked so watch carefully!

You can serve the tart plain or with a simple salad!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 1 Sheet of puff pastry
 1 cup Mozzarella (grated)
 100 g Prosciutto
 4 Eggs
 Salt and pepper
 3 tbsp Tomato sauce/Pesto/Sour cream
 Chives/Parsley/Dill/Chilli (to top)

Preheat the oven to 180 Celsius degrees.

Line a baking tray with the piece of baking paper. Place the pastry on the prepared baking tray.

Spread tomato sauce/sour cream/pesto on the pastry, keeping the edges clean. Bake the tart for 10 minutes

Remove the tart from the oven. Add grated cheese and prosciutto. Shape prosciutto to into little nests to make space for eggs and prevent them from running. Add eggs. Season with salt and pepper.

Bake until egg whites are cooked, but yolks are still soft, for about 10 minutes. Be careful with the timing - watch eggs carefully.
