Tomato soup is quite possibly the most perfect soup for me. It’s simple, delicious, and you can prepare it in many different ways changing how it taste every time. Comfort food at its best!

I especially love this Roasted Tomato Soup because of the sweetness and intense tomato flavor. So if you’re wondering why you should roast tomatoes just for the soup, here’s why. Roasting intensifies the flavor and really brings out the sweetness. The soup made with roasted tomatoes tastes way better! It’s seriously delicious! It’s light, fresh and I love this beautiful orange-red color.

The best part is that this gorgeous Roasted Tomato Soup is super simple and quick to make.

Here’s what you need to make this Roasted Tomato Soup:

  1. A few ripe tomatoes – cut them in half.
  2. One carrot – for even more sweetness!
  3. A small onion and a few garlic cloves – chop onion however you like, no need to chop garlic at all!
  4. Place all the veggies on a baking tray.
  5. Drizzle with oil and season with salt and pepper.
  6. Roast for around 30-40 minutes.
  7. Transfer everything to the blender.
  8. Add some broth, red wine vinegar, and fresh herbs.
  9. Blend until smooth.
  10. Pour into bowls.

That’s it! How amazing is that? No need to even use the pot!

The soup is made without any cream or milk, but feel free to add some if you want! It will be even more delicious!

I normally eat tomato soup alone, just with a splash of heavy cream or olive oil. But this time I served it with a grilled cheese and onion sandwich. It was the most comforting duo of all time. So, so good! I can’t believe I’ve never eaten tomato soup like this before! I’ll never make this mistake again!
This delicious grilled cheese and onion sandwich is easy to make, especially if you prepare the caramelized onions earlier. I usually make a lot! You can keep such onions in the fridge for a few days in the air-proof container. And you can add them to almost everything!

Here’s what you need to make Grilled Cheese Sandwich:

  1. Slices of sourdough bread – 2 per sandwich!
  2. Cheddar cheese – or any you want! 1-2 slices per sandwich.
  3. Butter – to spread on bread.
  4. 1 onion, some olive oil, and salt – to make caramelized onions.

And if you’re not an onion fan, you can totally skip it! It will be great too.

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 20 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

Soup
 5 Plum tomatoes
 100 g Cherry tomatoes
 3 Garlic cloves
 1 Onion
 1 Carrot
 1 cup Chicken or Vegetable broth
 ½ cup Fresh basil leaves
 1 tbsp Red wine vinegar
 1 tsp Sugar
 Olive oil
 Salt and pepper
 1 tbsp Worcestershire sauce (optional)
 Chilli flakes (optional)
Sandwich
 2 Slices of good quality bread
 2 Slices of cheddar cheese
 Butter
 1 Onion
 Olive oil
 Salt

Soup

Preheat the oven to 200 Celsius degrees.

Cut the tomatoes and place on a baking tray. Peel and slice the onion, then transfer to the tray. Peel garlic cloves, and transfer to the tray. Peel and slice the carrot, transfer to the baking tray. Season with sea salt and pepper, then drizzle with oil.

Bake for 30 minutes, until the tomatoes are soft and sticky.

Transfer everything from the tray into a blender. Add broth, basil leaves, sugar, red wine vinegar, Worcestershire sauce. Blend until smooth.

Heat 1 tablespoon of oil in a pan on medium-low heat. Add onions. Cook and stir until golden brown, around 30 minutes. Remove from heat.

Spread butter on each side of the bread slice. Place 1 cheese slice on the bread slice. Add onions, then remaining 1 cheese slice and cover with the bread slice.

Heat 1 tablespoon of oil in a pan on medium heat. Place the sandwich. Cook each side for around 3 minutes, covered. The sandwich should be golden brown on both sides.

Serve with the soup!
