Everybody needs a few quick pasta recipes! And this Zucchini And Tomato Pasta recipe is a 15-minute meal.

This is my favorite pasta during spring and summer days – ripe tomatoes, fresh basil, zucchini, and garlic with the easiest butter and olive oil sauce. It tastes the best with seasonal, full of flavor tomatoes. I rarely do it during autumn or winter because it just doesn’t taste that good.

This pasta may look shy or even too simple, but it tastes amazing! Butter and olive oil create a gorgeous, light sauce that combines perfectly with soft zucchini and ripe, fresh tomatoes. It’s absolutely delicious! You won’t miss any cream or cheese here!

This is an easy and quick pasta dish and you just need a few ingredients to make it. It’s a great idea for a weeknight meal! It’s also perfect when you really don’t feel like cooking – it takes just a few minutes to make. πŸ™‚ This pasta tastes good even in the room temperature. Plus, it reheats well which makes it a good option for the lunchbox!

Here’s all you need:

  1. Pasta – any you like. I like farfalle pasta for this recipe.
  2. Ripe tomatoes – the best you can find! I love heirloom tomatoes! Unfortunately, they are not available in Peru, so I went with plum tomatoes. It was amazing too!
  3. Zucchini – one medium zucchini will be enough.
  4. Garlic and basil – to season the pasta. You can go either with fresh basil or dried one. Up to you!
  5. Butter and olive oil – for the sauce. Be generous!

Simple Zucchini And Tomato Pasta

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 150 g Favourite pasta
 1 Zucchini
 2 Ripe tomatoes
 2 Garlic cloves (minced)
 3 tbsp Olive oil
 40 g Butter
 A few fresh basil leaves or dried basil
 Salt and pepper

Bring a large pot of salted water to boil. Add pasta and cook for the time written in the instructions. Drain the pasta.

Meanwhile, cut zucchini into smaller pieces. Peel and finely chop the garlic. Cut tomatoes into small cubes reserving all the juices.

Heat a large pan over medium heat with 1 tablespoon of butter and 2 tablespoons of olive oil. Add garlic. Fry for 1 minute. Add zucchini. Season with salt, pepper, and basil. Fry for a few minutes - until zucchini is almost cooked, stirring from time to time.

Add 1 tablespoon of olive oil more. Add tomatoes with all the juices. Fry for 2 minutes.

Add remaining butter and pasta. Toss everything together. Season with more salt, pepper or basil if needed.
