This Baked Eggs With Potatoes Asparagus And Ham recipe is a super simple idea for breakfast, lunch, or a light dinner. It comes together quickly, and you just need a few basic ingredients. Easy, delicious, and healthy! πŸ™‚

I feel a bit embarrassed to publish this post because this is a no-recipe recipe. 🙈 You don’t need to focus on the exact measurements. Plus, you can add whatever you have in the fridge (think leftovers). It’s that simple!

I went with a classic combination – eggs, asparagus, ham, and potatoes. I think it’s perfect and all the ingredients work great together. But you can make these baked eggs however you like! There are no strict rules! Yup!

Why I like this recipe so much:

  1. It’s easy and quick to make – nothing tricky here.
  2. Eggs and asparagus are absolutely delicious combo!
  3. You can use whatever you have in the fridge. Substitute ham with bacon or smoked salmon. Add cheese. Change potatoes for mushrooms. Throw some spinach and cherry tomatoes. Drizzle with basil pesto. This is a recipe that let you be creative! πŸ™‚
  4. No need to follow the exact measurements – adjust the amounts to your needs.
  5. The recipe can be easily scaled so you can feed a crowd!
  6. You can make these baked eggs in an oven-proof skillet or transfer everything to a greased baking dish. Up to you!
  7. Perfect for breakfast, brunch, lunch, or dinner.
  8. You can use different seasoning each time you make it! So even though it’s the same dish, it’ll taste a bit different!
  9. It looks pretty. Yes, I know it’s not important, but it does look pretty and I like it. 😅🙈

How to make it

The recipe is quick and easy but timing is important here. Well, at least, if you want the yolks to be runny. πŸ™‚

So here’s all you need to do:

  1. Pre-cook the potatoes in the boiling water or microwave. You can use small, new potatoes, cocktail potatoes, or regular ones cut into 4.
  2. Heat the skillet with butter and oil, and fry asparagus with garlic.
  3. Throw in potatoes and ham. Transfer to the oven and bake for a few minutes.
  4. Add eggs and bake until the eggs are cooked to your preferences. For the running yolks, the eggs shouldn’t be in the oven for more than 10 minutes.

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 2 Small eggs
 ½ Bunch of asparagus
 2 Potatoes
 2 Slices of ham (chopped)
 2 tbsp Butter
 Olive oil
 3 Garlic cloves
 Favourite herbs
 Salt and pepper

Wash and cut potatoes into smaller pieces. Precook potatoes in the salted water. Drain.

Preheat the oven to 180 Celsius degrees.

Heat an oven-proof skillet over medium heat with 2 tbsp of butter and a bit of olive oil (to prevent the butter from burning). Add 3 garlic cloves (whole, no need to peel). Add asparagus. Cook for 3 minutes.

Take the skillet out of the heat. Add potatoes, ham, and season with salt, pepper, and your favorite herbs. Drizzle with olive oil.

Bake in the oven for around 10 minutes.

Take out from the oven, add eggs, and transfer back. Bake until the egg whites are set, but yolks are still running, around 5 minutes.
