I love simple and quick breakfast recipes. And this recipe is exactly like that! Just mix a few ingredients together and bake. Plus, it’s good for you! This baked oatmeal is nutritious, healthy, and will keep you full for long.

The smell that fills the house when your oatmeal is in the oven is just gorgeous! Imagine delicious, sweet fruits seasoned with cinnamon and nutmeg… this is a perfect way to start a day!

How to make it

This is an extremely easy recipe. You’ll need just a few ingredients (with lots of substitutes!) and the prep time is short! I am sure you’re going to love it!

Here’s what you need:

  • Old-fashioned rolled oats – you can choose organic or gluten-free if you want to, but regular rolled oats will do too!
  • Fruits of choice – anything that you like and is in season! Think bananas, apples, pears, peaches, plums, strawberries… You can also use frozen fruits if you wish!
  • Something sweet – coconut sugar is amazing here, but maple syrup, honey, or regular white/brown sugar will work too!
  • Spices – cinnamon and nutmeg.
  • Coconut oil – or butter.
  • Hot water.

Additionally, you can add chopped nuts or shredded coconut. Up to you!

And here’s how to make it:

  • Transfer sliced/chopped fruits into a baking dish or cast-iron skillet.
  • Add sugar/maple syrup/honey and mix together.
  • In a small bowl, mix together oat flakes with coconut oil, and a little bit of hot water. Let is soak for 5 minutes.
  • Top fruits with soaked oats.
  • Bake for around 15-20 minutes!

When your baked oatmeal is ready, you can top it additionally with peanut butter, chocolate, or cream. Delicious!!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 10 tbsp Old-fashioned rolled oats
 2 tbsp Coconut oil (or butter)
 2 tbsp Coconut sugar (or honey/maple syrup/white sugar, to taste)
 4 Peaches (or other fruits like bananas, apples, pears, strawberries, plums etc.)
 1 pinch Cinnamon and nutmeg
  cup Hot water
 1 tbsp Chopped nuts or shredded coconut (optional)
To serve (optional)
 Peanut butter, chopped dark chocolate, cream.

Preheat the oven to 190 Celsius degrees.

Slice your fruits of choice and place into a small baking dish or a cast-iron skillet. Add sugar and mix together.

In a small bowl mix together rolled oats with coconut oil, spices, nuts/coconut if using, and hot water. Let it soak for 5 minutes.

Top fruits with oatmeal and transfer to the oven. Bake for around 20 minutes.

Serve warm topped additionally with peanut butter, chopped chocolate, cream, etc.
