This is one of my favourite ways to cook a chicken breast when in a hurry! 😉 So if you’re looking for a quick and easy chicken breast recipe, look no further!

This one-pan chicken breast in tomato sauce is simple to make, and just perfect for a busy mid-week dinner.

You will have it on your table in less than 30 minutes – it’s that quick! And you can serve it however you want – it goes well with rice, bread, potatoes, or even pasta. No rules here, just choose the side that you like.

It’s a dish that you can prepare in no time with a few basic ingredients. I think you will love this recipe as much as I do! 🙂

The sauce is made with canned tomatoes and is seasoned to perfection with herbs, smoked paprika, cayenne pepper, and curcuma. It’s flavorful and rich, yet so simple!

What you need

You’ll need a few pantry staples to make this chicken breast.

Here’s your full ingredients checklist:

  • Chicken breast – I use 2 large chicken breasts for 4 people. You can also use turkey!
  • Onion and garlic – basics.
  • Canned tomatoes – passata or fresh tomatoes will be great too!
  • Herbs – dried oregano, basil, thyme.
  • Seasoning – smoked paprika, cayenne pepper, curcuma, pepper.
  • Olive oil – you can use butter or regular cooking oil too.
  • Optional vegetables like bell pepper, carrot, or green peas.

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 2 Large chicken breasts
 1 Can of chopped/crushed tomatoes (400g)
 ¼ cup Chicken broth (or water)
 1 Small onion
 2 Garlic cloves (minced)
 1 Small bell pepper (optional)
  tsp Dried oregano
  tsp Dried basil
  tsp Dried thyme
 1 tsp Smoked paprika (or regular sweet paprika)
 ¼ tsp Curcuma (optional)
 Salt, Black pepper, Cayenne pepper (to taste)
 Olive oil

Cut chicken breasts into bite-size cubes. Finely chop the onion, mince garlic cloves, chop bell pepper if using.

Heat a large pan with a little bit of olive oil over medium heat. Add onion and cook until soft, stirring every now and then. Then, garlic and cook for a moment.

Add chopped bell pepper if using and fry for 1 minute.

Add cubed chicken breast and season with salt, pepper, paprika, oregano, and curcuma. Cook for around 5 minutes, stirring often.

Add the chopped tomatoes and the broth or water. Bring to boil and simmer over medium-low heat for around 10 minutes, stirring from time to time. Taste and season if necessary.

Serve with rice, bread, potatoes, or pasta!
