Garlic Chilli Chicken

This Thai-inspired garlic chilli chicken recipe is delicious and super easy to make! It’s probably one of the easiest recipes out there:

  • mix the ingredients,
  • place in a baking dish,
  • and bake!

And there’ll be plenty of yummy sauce! 🙂

It’s a wonderful dinner idea for any day of the week! It’s a truly effortless recipe (the prep time is really quick) – the chicken is baking with the sauce.

This sauce is especially terrific because the juices of the chicken mix with the marinade while it’s baking. And it’s SO, SO GOOD! If you like Asian flavors, you’ll love this dish!

Garlic Chilli Thai-inspired Marinade

This chicken recipe is all about garlic chilli marinade that works both as a marinade and as the sauce. While the chicken is baking, its juices mingle with the marinade and it creates a delicious sauce with big, bold flavors.

The chicken has gorgeous crispy skip and is juicy and moist on the inside. Just amazing!

The marinade is simple and calls for typical ingredients you’ll find in other Asian-inspired recipes. 🙂

Here’s what you need for the marinade:

  • Ketchup and hot sauce – choose your favorites! You can also use Sriracha, I just didn’t have it.
  • Fresh garlic, fresh chilli, fresh ginger, lime juice – basics. You can use cayenne pepper or chilli flakes instead of fresh chilli.
  • Soy sauce and fish sauce – to add savory, umami flavor.
  • Honey – or brown sugar.
  • Toasted sesame oil – great to add, but it’s ok to skip it.
  • Salt and pepper – to season.

You’ll end up with a decent amount of sauce which is just perfect to spoon over fluffy rice! 🙂

How to make it

This is a really simple recipe – just mix the marinade ingredients, pour over the chicken, and bake.

You don’t need to marinate the chicken for long hours – 30 minutes is enough! And it’s even okay to skip marinating completely. Yes, really. 🙂

Serve this gorgeous garlic chilli chicken with fluffy rice and a simple salad on the side! I served mine with incredible spicy pineapple salsa. The recipe for this salsa is coming later this week!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 4 Large chicken thighs
 3 tbsp Ketchup
 1 tbsp Hot sauce (your favourite)
 2 tbsp Soy sauce
 2 tbsp Honey (or brown sugar)
 3 Garlic cloves (minced)
 Fresh, chopped chilli (or chilli flakes/cayenne pepper, to taste)
 1 tsp Ginger (grated)
 1 tbsp Lime juice (or rice vinegar)
 1 tsp Fish sauce
 1 tsp Toasted sesame oil (optional)
 Salt and pepper
To serve
 Cooked rice, simple fresh salad or salsa
 Chopped green onions or cilantro

Mix all marinade ingredients.

Place the chicken thighs in the zip bag or a bowl, and pour over the marinade. Mix. Marinate the chicken for 30 minutes if possible.

Preheat the oven to 180 Celsius degrees.

Transfer the chicken with all the marinade to the baking dish, skin up. Bake for 50 minutes minutes, up to 1 hour.

You can spoon the sauce over the chicken while it's baking from time to time.

Serve with rice and a salad!
