This is a delicious recipe for quick creamy vegetable soup that’s all about healthy veggies.

It’s light and delicate, because there’s not a lot of cream in it, yet it’s still super tasty. It’s the best served with a piece of rustic bread smeared with butter! So comforting! πŸ™‚

There are lots of different vegetable soup recipes out there. This one is a Polish old-school vegetable soup recipe. The soup is made with seasonal veggies such as cauliflower, green peas, green beans, carrots, and potatoes, a little bit of cream, and lots of fresh dill or parsley.

In spring and summer, fresh vegetables are the best. In winter and autumn, feel free to use frozen ones.

It’s not that common in Poland to thicken soups with flour, so this soup consistency is more like a light creamy broth. You can thicken it with flour if you feel like it!

What you need and how to make it

This recipe is very simple, so except for vegetables, you won’t need much.

Here’s your checklist:

  • Vegetables – cauliflower, green peas, green beans, carrots, and potatoes, onion.
  • Cream and butter – just a bit, you’ll need 1/3 cup of cream and 2 tbsp of butter.
  • Broth – you can use any you have – chicken, vegetable, beef. It can be store-bought or you can use a good quality bouillon cube. I made the broth myself so you can see a little piece of meat in my soup as I added the meat from cooking the broth.
  • Fresh herbs – dill is especially amazing here, but parsley will do too!
  • Salt and pepper – to season the soup.
  • Bread or egg noodles – to serve the soup.

Here’s the overview of the cooking process:

  1. You start with cooking the onion until soft.
  2. Then, you need to add grated or chopped carrot and cook it for a moment.
  3. Now, add potatoes and cook for a few minutes more.
  4. Add the rest of the veggies, broth, herbs, bring to boil and cover. Cook for 20 minutes, until all vegetables are soft.
  5. Add cream and cook for 5 minutes more. Season to taste and serve!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 6 cups Broth
 1 Big potato
 1 cup Green peas
 1 cup Green beans
 2 cups Cauliflower
 1 Carrot
 1 Onion
 2 tbsp Butter
  cup Heavy cream
 Fresh dill or parsley
 Salt and pepper
To serve
 Bread with butter or egg noodles

Prepare the vegetables - peel and cut the tomatoes, chop the onion, cut green beans and cauliflower, grate the carrot.

Heat a large pot with 2 tbsp of butter over medium heat. Add onion and cook for 2 minutes, until soft.

Add carrot and cook for 2 minutes more.

Add potatoes and again for a few minutes more.

Add the rest of the veggies, hot broth, herbs, salt, and pepper. Bring to boil and cover. Cook over medium-low heat for 20 minutes more., until all vegetables are soft.

Now add cream, bring to boil, and cook for 5 minutes more.

Season to taste and serve!
