Mexican Chicken Salad (With Corn And Avocado)

This Mexican Chicken Salad is fun to make, fresh in flavor, and make an awesome lunch or dinner! Nothing boring here! Only good stuff: flavourful and crispy chicken, charred corn, creamy avocado bites, sweet cherry tomatoes, red onion, and cheesy nachos! Yummy!

Mexican Chicken Salad (With Corn And Avocado)

I was eating different versions of chicken salad for months while leaving in Poland. Almost every day! And I am not a person that gets excited about salad! Not at all. But this Mexican Chicken Salad is so good! It’s fresh, full of flavor, and filling. It’s just perfect for lunch or dinner.

Most of the time, I would make this salad without battering the chicken. That is how most chicken salad recipes look like – no battering the chicken!

This time I wanted something different. And this crunchy chicken is incredible here! It adds texture to the salad! And more flavor! Seriously, I don’t know why I haven’t done it before! Only crunchy chicken in a salad from now on for me! But, yes, if you want a more classic salad, you can simply season the chicken breast and grill/bake/fry without any batter.

The other thing I did a little bit different here is charring the corn. The charred corn flavor is incredible! It tastes so good! It’s the secret ingredient of this salad. Absolutely delicious.

Crunchy Chicken Charred Corn And Avocado Salad

What you need

  1. So the salad starts with a chicken breast. It’s seasoned with cumin, smoked paprika, and oregano. Amazing! You’ll also need some breadcrumbs and one egg for the batter if you’re going that way.
  2. Charred corn goes next. Sure, you could just add corn kernels straight from the can, but please don’t do it if you have time! The charred corn is amazing! It’s the secret ingredient of this salad!
  3. Then we need to add some greens. I simply used a store-bought mix of lettuces, no strict rules here!
  4. Adding chopped avocado is next. To prevent it from getting dark, mix it with a little bit of lime juice.
  5. Red onion – just a little bit.
  6. Cherry tomatoes or any other tomatoes you have! Cut in half!
  7. Time to drizzle the salad with a simple dressing. Delicious!
  8. Cheesy nachos to serve – totally optional, but why not?!

Do you want to add something more? Think bacon, black beans, green onions, carrot, bell peppers, chilli, cheddar, feta, queso blanco!

But what about the dressing? Most of the time, I would just drizzle the salad with a little bit of lime juice. Yes, really. But you can prepare any dressing you want for this salad. For example, mix oil with lime juice, minced garlic, honey, and mustard. Season with salt and pepper. Or skip the mustard and lime juice, but add wine vinegar instead. Or add some chopped herbs. Lots of options!

How to make it

The recipe is simple, but yes, there may be more steps than usual because of frying the chicken breast and charring the corn. I don’t mind it because the end result is amazing! But if you want to, you can skip charring the corn, and fry the chicken without the batter – the preparation will take less time then. Up to you!

  1. So start with the chicken breast. Cut the chicken breast in half and season with all the spices. If you want to use the batter, dredge in egg, coat in breadcrumbs, and fry until golden! If you don’t want to use the batter, just skip this step and fry/bake the seasoned chicken breast without it.
  2. Now, it’s time to charr the corn. Simply, heat the skillet or pan over medium-high heat with a little bit of oil. It has to be hot! Add corn kernels and let it get charred – don’t stir at the beginning. When ready, remove from the heat.
  3. When you have your charred corn and fried chicken, the rest is super simple. Cut the avocado and drizzle with lime juice.
  4. Half the cherry tomatoes.
  5. Slice the onion.
  6. Prepare the dressing – up to your preferences.
  7. Arrange everything on the plate and drizzle with the dressing.
  8. Serve with cheesy nachos – if you want to!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

Chicken
 1 Small chicken breast
 1 Egg
 ½ cup Breadcrumbs
 ½ tsp Smoked paprika
 ½ tsp Oregano
 ½ tsp Cumin
 1 pinch Chilli flakes/powder
 1 pinch Garlic powder
 Salt and pepper
 Oil
Charred corn
 1 cup Sweet corn kernels
 Oil
Salad
 3 cups Mixed greens
 1 cup Cherry tomatoes
 1 Avocado
 ½ Red onion
 Nachos
Honey-mustard dressing
 3 tbsp Olive oil
 1 tbsp Lime juice
 1 tsp Honey
 1 tsp Mustard
 1 Garlic clove (minced)
 Salt and pepper
Herb dressing
 3 tbsp Olive oil
 1 tbsp Lime juice
 1 tsp Honey
 1 tbsp Fresh coriander or parsley (chopped)
 1 Garlic clove (minced)
 Salt and pepper

Prepare the dressing - in the jar/cup mix all the ingredients. Season with salt and pepper. Mix together. Set aside.

Now, mix all the spices together. Cut the chicken breast in half horizontally and season with all the spices.

Place breadcrumbs in one plate and the whisked egg in a bowl. Dredge the chicken breast in egg, then coat in breadcrumbs.

Heat the pan with a little bit of oil over medium heat and fry chicken until golden. Remove from the pan.

At the same time, heat another pan or skillet over medium heat with a little bit of oil. Add corn and let it get charred - don't stir 2 minutes. Then, stir a few times, let it get charred again and remove from the heat.

Now prepare the rest of the veggies: cut tomatoes in half, cut avocado and drizzle with lime juice, slice the onion.

Cut the chicken into slices.

Place greens in a big plate/bowl. Top with chopped veggies, charred corn, and chicken. Drizzle with the dressing.

Serve with nachos.
