This Delicious Chicken Puff Pastry Pie is super tasty and beautiful, though made with basic ingredients. It’s a simple, easy dish that you can prepare during a busy work week, a lazy weekend or when guests are coming over!
The creamy chicken and vegetable filling is effortless to make, and then you just cover it with a store-bought puff pastry sheet and bake! I love how easy this dish is to put together and how comforting and satisfying it is.

The pie filling is basically a stew made with chicken meat, vegetables (mushrooms, leeks, peas), cream, and herbs. A chicken stew with some vegetables (especially peas and carrots) is a popular dish in Poland although it’s usually served with mashed potatoes. This time I baked it with puff pastry on top! So good!

You can make this gorgeous pie in small, individual pots or one, big casserole dish like I did. Up to you!

Make it your own

This delicious pie can be made in lots of different versions! You can use exactly the same ingredients as I did or adjust the recipe to what you like and have in the fridge! A great way to use leftover meat and veggies! Take a look at my ideas below.

What to add to Delicious Chicken Puff Pastry Pie:

  1. Meat – I used chicken but turkey will work great too! If you have some leftover cooked chicken, use it! Add shredded meat to the sauce just before baking. If you make it from scratch, use chicken breast or skinless, boneless chicken thighs. Adding some chopped bacon or ham is also a good idea!
  2. Puff pastry – I used store bought puff pastry for this recipe but feel free to use filo pastry or shortcrust pastry if you like! Creamy, mashed potatoes spread on top will work too!
  3. Vegetables – I went with mushrooms, leeks, and peas. Honestly, you can add any veggies you fancy! Celery, carrots, green beans, asparagus, spinach, potatoes, corn, broccoli… anything you like and have in the fridge!
  4. Herbs – fresh or dried, herbs add so much flavor to this pie! I used fresh parsley and dried thyme and bay leaves. Feel free to use other herbs like tarragon, oregano, basil, rosemary, or dill! Adding some basil pesto to the sauce will be amazing too! You can even make it in Thai style by adding Thai green curry paste and using coconut milk instead of cream.
  5. Cream and broth – for the sauce. If you want to, you can substitute the broth with milk or white wine.
  6. Butter and olive oil – for frying. Butter also adds flavor to the sauce so please don’t skip it!
  7. Onion and garlic – basics!
  8. Soy sauce – this is totally optional, but you can add some for savory, umami flavor.

I love pies! They are just perfect for using leftovers!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 1 Chicken breast
 1 Sheet of store bought puff pastry
 200 g Mushrooms
 1 cup Peas
 1 Leek
 ½ Onion
 2 Garlic cloves
 2 tbsp Parsley (chopped)
 ½ tsp Dried thyme
 2 Bay leaves
 ½ tsp Paprika powder
  cup Cream
 ½ cup Broth (or water or milk)
 1 tbsp Olive oil
 2 tbsp Butter
 2 tbsp Soy sauce (optional)
 Salt and pepper

Preheat the oven to 180 Celsius degrees.

Cut chicken into smaller pieces. Season with salt, pepper, and paprika. Set aside.

Peel and finely chop the onion and garlic. Wash carefully and chop the leek.

Heat the large pan with olive oil and butter on medium heat. Add chopped onion, garlic, and leek. Add bay leaves. Season with salt. Fry for a few minutes, until soft.

In the meantime, wash and slice the mushrooms.

Add the chicken to the pan, and fry for 5 minutes. Add mushrooms, and fry for 5 minutes more - until soft.

Add peas, thyme, parsley, soy sauce, cream, and milk. Mix everything together and let it simmer for 2 minutes. Taste and season with salt and pepper if needed. Transfer the filling to the casserole dish.

Transfer the filling to the casserole dish.

Cover the dish with the puff pastry sheet.

Put to the oven and bake for around 30 minutes- until golden!
