Easy Baked Spanish Tortilla

This easy baked Spanish Tortilla is the easy way to make famous Spanish tortilla de patatas no flipping, just pour everything into a baking dish and finish the tortilla in the oven! Easy Baked Spanish Tortilla

In Spain, tortilla de patatas is made with raw potatoes and entirely on the stove. This Easy Baked Spanish Tortilla is my simplified version – I pre-cook potatoes, and although I start with frying the ingredients on the stove, I then transfer them to a baking dish to finish cooking in the oven. I find it to be the easier way to make Spanish tortilla – no accidents when flipping the tortilla, no uncooked potatoes inside, no sticking to the bottom of the pan. Ughh, I experienced it all.

How to make it

  1. Caramelize onions. It’s the key step. It makes all the difference! Fry onions on the mixture of butter and oil, and when they start getting brown, add potatoes. These sweet onions add so much flavour to dish!
  2. Slice and pre-cook potatoes. I usually do it in the microwave because it takes less than 5 minutes! But pre-cooking potatoes traditionally will work too.
  3. Before adding potatoes and onions to the whisked eggs, transfer them first to a different bowl/plate and remove the excess of oil with the paper towel.
  4. Pour the egg, onion, and potato mixture into a baking dish and bake in the oven for 20 minutes.
  5. Serve hot or cold.

This is the classic version of Spanish tortilla. It’s made only with potatoes, onions, and eggs. 3-ingredient magic! Don’t let the short ingredient list fool you – this potato and egg omelet is seriously tasty! This tortilla is so good, that I like to eat it just like that, with a simple salad on the side. But you can totally use this recipe to make your own version – try adding chorizo, bacon, ham, vegetables, or cheese! It’s a great way to use leftovers!

I like this recipe a lot, because the tortilla reheats well, and you can keep it in the fridge for a few days! Such a time-saver! I think you’ll enjoy it too!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 5 Eggs
 3 Potatoes
 1 Onion
 1 tbsp Butter
 Olive oil
 Salt and pepper

Preheat the oven to 180 degrees Celsius.

Peel and finely slice the onion. Heat big pan over medium-low heat with 1 tablespoon of oil and 1 tablespoon of butter. Add the onion. Fry onions for 10 minutes stirring often.

In the meantime, peel, slice, and pre-cook potatoes. I usually do it in the microwave because it takes less than 5 minutes! But pre-cooking potatoes in boiling water will work too. They don't have to be fully cooked but should be raw either.

When the onions start getting brown, add more oil and turn the heat a little bit up. Add potatoes. Season with salt. Fry for a few minutes - potatoes need to start getting golden. Be careful to not burn the onion.

In a big bowl, whisk 5 eggs. Season with salt and pepper. Add potatoes and onions, mix together.

Lightly oil the baking dish and transfer the mixture. Bake in the oven for around 20 minutes

Serve hot or cold.
