Crispy edges on the outside, soft and fluffy on the inside, these greek yogurt pancakes are definitely worth waking up for.

Yogurt pancakes have a special place in my heart. They’re super easy and quick to make, healthy, and totally delicious. πŸ™‚

You just need a few basic ingredients to make these pancakes, and you can add any fruits you like! Think strawberries, raspberries, peaches, bananas, or apples. Lots of different options!

Here’s all that you need:

  • Flour – all-purpose, plain flour.
  • Greek yogurt – natural one will be the best!
  • Blueberries – or other fruits of choice.
  • Sugar – just a bit, I usually add 1-2 tablespoons. You can adjust the amount to your needs.
  • Baking powder and vanilla extract– basics.
  • Vinegar – yes, you read it right! Adding a bit of vinegar will make the pancakes extra fluffy. Don’t worry, you won’t feel it.
  • Eggs – 2 whole eggs.
  • Butter – for frying.
  • Toppings of choice.

How to make fluffy pancakes

Making pancakes is super easy, but to make truly soft and fluffy pancakes may be a bit tricky.

Here are a few helpful tips to make truly fluffy pancakes:

  • In a big bowl, mix wet ingredients first, then add dry ones. Not the other way round! Always add wet ingredients to the dry ones.
  • Don’t over mix the dough. When it’s just combined, it’s ready.
  • Add blueberries at the end.
  • Don’t forget to add a bit of vinegar.
  • Use fresh fruits, not frozen ones. Frozen fruits will release too much liquid.
  • Keep the cooked pancakes warm in the preheated oven on a rack.

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

Wet ingredients
 1 cup Greek yogurt (250 g)
 2 tbsp Sugar
 2 Eggs
 1 tsp Vanilla extract
Dry ingredients
 1 cup Plain, all-purpose flour
 2 tbsp Baking powder
Other
 1 cup Blueberries
 Butter for frying
 Toppings of choice

In a big bowl whisk together eggs with sugar and vanilla extract. Add yogurt and mix again.

Add flour and baking powder and mix again, just until combined.

Add blueberries and mix softly again.

Heat a large non-stick pan over medium heat with 1-2 tbsp of butter. Pour about 1/4 cup of batter (per pancake) and spread it. Cook until there are little bubbles on top of the pancake. Flip and cook for another 2 minutes, until the pancakes are fluffy and cooked through.

Serve warm!
