Egg muffins are a great way to use any leftovers you have in the fridge! You can make these muffins with whatever you want! 

Here’s what you can add to your egg muffins:

  • Meat chicken, bacon, sausage, chorizo, smoked salmon… whatever you fancy. Without the meat, egg muffins are terrific too, so feel free to skip it!
  • Cheese – any you like! Cheddar, emmental, feta, blue cheese – these are just some options!
  • Different veggies – mushrooms, leeks, bell peppers, spinach, cooked potatoes, asparagus – no strict rules!
  • Different seasoning – you can season your muffins with lots of different spices! Dried herbs, smoked paprika, curry powder, chilli flakes, mustard, tabasco. Up to you!

One important thing – be careful with the amount of vegetables. Too many veggies = heavy muffins with too much water. Don’t overdo it!

How to make and store egg muffins

These Quick Breakfast Muffins are very easy to make – it’s a mix everything together and bake kind of recipe. Totally effortless! ๐Ÿ™‚

  1. Preheat the oven to 180 Celsius degrees.
  2. Chop the ham and veggies.
  3. Whisk the eggs in a big bowl, add shredded cheese, ham, and veggies.
  4. Pour the egg mixture into the muffin tin and bake.
  5. Ready!

To prove it, here’s the quick overview of the process:

To be sure that eggs won’t stick to the muffin tin, use either non-stick tin or lay it down with baking paper. Always grease the tin before pouring the egg mixture!

While the muffins are baking, they’ll expand and grow, but they’ll deflate after you take them out of the oven. It’s totally normal! Nothing to worry about.

You can store egg muffins in the air-proof container in the fridge up to 4 days. They reheat well in the microwave, but you can eat them cold too! Tasty, healthy snack on-the-go!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 5 Eggs
 1 cup Shredded cheese
 A few slices of ham (chopped)
 1 Small tomato (chopped)
 1 tbsp Green onions (chopped)
 Salt and pepper
 Oil
 Dried herbs, favourite seasoning (optional)

    Wow! These look so yummy. I would have to sub out the ham for a different meat as I’m allergic to pork but that would be an easy fix. There are so many different combos you could make with this recipe. YUM!
