  • Bake it (great for bone-in, skin-on chicken thighs, drumsticks, wings, and a whole chicken),
  • Cook it in the pan/skillet (perfect for chicken breast and boneless, skinless chicken thighs),

The honey lime cilantro chicken marinade is one of the best chicken marinades that exist. I swear! The combination of flavors is simply excellent.

It’s rich, flavorful, fresh, and you can really taste each of the ingredients. AMAZING! 🙂

And you need just a few ingredients to make it!

The marinade is particularly great for chicken breast because it makes it extra juicy and moist. But it works as good with other parts of the chicken!

Here’s what goes into the honey lime cilantro chicken marinade:

  • Lime juice – so fresh! If you want to have even stronger lime flavor, add lime zest too.
  • Soy sauce – for saltiness and umami flavor. Use all-purpose soy sauce or light soy sauce. So good!
  • Honey – just amazing with chicken! It’ll allow the chicken to nicely caramelized.
  • Fresh cilantro – even if you’re not a cilantro fan, you will be surprised how good it tastes here.
  • Garlic – everything with garlic is better. 🙂
  • Chili flakes – to balance the flavor. You can use fresh chili or cayenne pepper too.
  • Black pepper and salt.
  • Olive oil.

Tips for making the chicken

  1. You’ll achieve the best result if you marinade the chicken overnight, but even a few hours will do!
  2. Because there’s a lot of lime juice in this marinade, the chicken may be a little bit white after a few hours of marinating. It’s normal and nothing to worry about.
  3. Use it for any cut of chicken you like.
  4. You can bake the chicken in the oven, cook it on the pan/skillet, or grill it!
  5. After the chicken is cooked, cover it loosely with aluminum foil and let it rest for a few minutes. It will release juices = extra sauce!
  6. Serve it with a simple salad on the side and potatoes (in any form), rice, or bread! I also like to add charred lime wedges.
  7. Optionally, sprinkle fresh, finely chopped cilantro before serving.

How long can chicken be marinated in the lime juice?

You can marinate the chicken up to 24 hours. I wouldn’t recommend marinating it longer.

Can I substitute cilantro with other herbs?

I highly recommend using cilantro, it’s amazing here. I am not a huge fan of cilantro, but I just love it in this marinade. If you want to use another herb, I would go with parsley.

Is this chicken spicy?

No, even though there are chili flakes, this chicken is not spicy. There’s a lot of honey in this marinade. But if you want to be completely sure, just skip chili. On the other hand, if you want spicy chicken, you’ll need to add more chili.

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 4 Chicken breasts (700 g)
 ¼ cup Lime juice (around 3 limes)
 ¼ cup Honey
 ¼ cup Soy sauce (all-purpose or light)
 1 tbsp Olive oil
 3 Garlic cloves minced
 ½ cup Chopped fresh cilantro
 ¼ tsp Chilli flakes
 ¼ tsp Black pepper
 1 pinch Salt

Pound the chicken breast lightly with a rolling pin.

Mix all marinade ingredients, add chicken, and marinate for a few hours at least, the best overnight.

Remove the chicken from marinade shaking off the excess.

Cooking in the pan/skillet

Heat a little bit of oil in a large pan/skillet over medium heat. Place chicken breast and cook for 5 minutes each side, until golden brown.

Remove from the pan and cover loosely with aluminum foil. Let it rest for 5 minutes.

Baking in the oven

Preheat the oven to 180 Celsius degrees. Bake the chicken breast for 20 minutes, flipping in the middle. Remove from the oven and cover loosely with aluminum foil. Let it rest for 5 minutes.

If you use the bone-in, skin-on chicken thighs/drumsticks, bake the chicken for 50 minutes. If the chicken is browning too quickly, cover it loosely with aluminum foil.
