Have you heard about leczo? 🙂 It’s a delicious stew made with bell peppers, tomatoes, onions, and sausage. That’s the most traditional, Hungarian version.

But as with every dish, there are hundreds of variations, especially in Poland. We love leczo and we prepare it in many different ways. Polish leczo can be made with zucchini, mushrooms, sweet corn, chicken, ground meat, bacon… See? Lots of different versions! 🙂

It’s one of these meals that you most probably won’t find in a restaurant, but it’s really popular when it comes to home-cooking. It’s simple, comforting, and really tasty!

The key ingredient of leczo is pepper. Not only fresh one, but also powdered one – sweet, smoked, and spicy. Then tomatoes, onions, and sausage. I especially love this stew with zucchini and sweet corn kernels. So good! It’s a great dish to sneak in lots of vegetables!

Leczo is usually made during summer with gorgeous, seasonal peppers and tomatoes and served with a piece of bread or rice. For me, there’s nothing better than a bowl of leczo during a warm, summer evening. Comfort food at its best!

It’s a perfect dish for a busy day because it’s easy and quick to make. Plus, it’s made in one-pot = little to wash!

What you need and how to make it

This a simple recipe for Leczo, you will just need a few ingredients to make it.

You’ll need:

  • Bell peppers – red, orange, yellow, green. Choose the one you like.
  • Tomatoes – the sweetest and ripest you can find! You can use passata or canned tomatoes too.
  • Onion – basics.
  • Sausagesmoked sausage would be the most popular choice, but Spanish chorizo or Italian sausages will work too. You can totally substitute the sausage with bacon, chicken, or ground meat!
  • Seasoning – sweet paprika powder, smoked paprika powder, cayenne pepper, oregano, thyme, and pepper.
  • Broth or water – if the sauce is too thick, you may add some.
  • Lard – for frying. It’s the traditional way. If you don’t like this idea, use oil, but I do think it taste the best when frying with lard.

When you have your ingredients, you can start cooking.

It’s an easy one-pot dish:

  1. Start with frying onion and sausage, until nicely caramelized.
  2. Add peppers and fry for a few minutes more.
  3. Now, add tomatoes, broth if needed, and all the spices. Let the stew simmer for around 20 minutes.
  4. Ready!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 1 Bell pepper
 1 Tomato
 1 cup Passata - tomato purée (or 1 can of tomatoes)
 ½ Onion
 100 g Sausage
 ½ cup Sweet corn kernels
 ½ tsp Smoked paprika powder
 ½ tsp Sweet paprika powder
 1 pinch Chilli flakes (or cayenne pepper)
 1 tsp Thyme
 1 tsp Oregano
 ½ tsp Sugar
 ½ cup Broth (or water)
 Salt and pepper
 Lard
To serve
 Bread or rice

Chop tomatoes and pepper. Peel and finely chop the onion. Slice the sausage.

Heat a large pan over medium heat with 1 tablespoon of lard. Add sausage and cook until it starts getting nicely brown. Add onion and cook for 2 minutes more.

Add pepper and cook for another 2 minutes.

Add tomatoes, passata, broth or water, and all the spices.

Lower the heat and simmer for around 20 minutes, until the sauce thickens.

Serve!
