Beef And Green Beans Noodles

Everybody needs a good, quick and easy dinner recipe. And these Beef And Green Beans Noodles are all of these! It’s the dish that will be on your table in 15 minutes!

The recipe is simple and has a nice flow – while the beans are cooking, you make the steak. Then while the steak is resting, you fry the garlic and ginger and add noodles to the boiling water with beans. After draining the noodles and beans, you just toss everything together in a sauce. Ready to serve!

Talking about the steak, you can prepare this dish another way. The version with steak is a great option when you want to make something fancy. 🙂 Perfectly juicy pieces of steak are something special to me!

So the other option is to make a quick stir-fry. Instead of cooking the steak, you cut the beef into thin slices and then fry on the pan. The rest of the steps is practically the same. Easy everyday option! 🙂

What you need

This recipe calls for simple ingredients that you can find in a regular supermarket.

Here’s all you need:

  1. Beef – a steak cut. Any you like! For the steak version, I’d go with a really nice cut of beef while for the stir-fry, I’d choose something more economical.
  2. Noodles -fresh or dry egg noodles. Choose your favorite ones! You can make it even with regular pasta. It’ll be nice too!
  3. Green beans – a cup of chopped beans will be enough.
  4. Soy sauce, vinegar, broth, cornstarch – for the sauce. You can substitute broth with water, but the sauce won’t have that deep flavor.
  5. Garlic and ginger – basics.
  6. Green onions – or thick chives.
  7. Sesame seeds and fresh cucumber – to serve, totally optional.

Beef Noodles

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 200 g Favourite egg noodles
 300 g Beef (any steak cut you like)
 1 cup Green beans (chopped)
 ¼ cup Green onions (chopped)
 3 Garlic cloves (chopped)
 1 tsp Ginger (grated)
 Salt and pepper
 Oil
 Sesame seeds (optional)
 Cucumber (sliced)
Sauce
 3 tbsp Soy sauce
 1 tbsp Rice vinegar (or white wine vinegar)
  cup Broth
 1 tsp Corn stratch

Stir-fry

In a cup or bowl, mix together soy sauce, vinegar, broth, and corn starch. Set aside.

Bring a large pot of lightly salted water to the boil. Add chopped green beans and cook for around 7 minutes, the beans should be cooked al dente.

While the beans are cooking, cut the beef into thin slices. Peel and grate the ginger, chop the garlic, chop green onions.

Heat oil in a large pan, skillet or work over high heat. Add beef and season with a little bit of salt and pepper. Cook for around 2 minutes, until it's brown.

Lower the heat to medium. Add garlic, ginger, green onions and quickly stir. Cook for 1 minute.

Add noodles to the same pot with beans. Cook the noodles for the amount of time specified on the packaged MINUS 1 minute. Drain the noodles and green beans. Rinse them under cold water.

Add noodles, green beans, and sauce to the pan. Toss together until sauce thickens.

Serve! Add fresh, sliced cucumber and sesame seeds if using.

Steak

If you're going with a steak, take it out of the fridge 30 minutes before cooking.

While the beans are cooking, peel and grate the ginger, chop the garlic, chop green onions.

Heat oil in a large pan or skillet over high heat. Add the steak and season with a little bit of salt and pepper. Cook the steak to your liking. Remove the steak from the pan and let it rest. I like my steak medium rare so I cook it for 3 minutes on each side.

Lower the heat to medium. Add garlic, ginger, green onions and quickly stir. Cook for 1 minute.

Add noodles to the same pot with beans. Cook the noodles for the amount of time specified on the packaged MINUS 1 minute. Drain the noodles and green beans. Rinse them under cold water.

Add noodles, green beans, and sauce to the pan. Toss together until sauce thickens.

Cut the steak into slices.

To serve, divide the noodles between 2 bowls, top with the steak slices and optionally fresh, sliced cucumber and sesame seeds.
