In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

Pepper Prok Tenderloin
 700 g Pork tenderloin
 1 tbsp Coarsely grounded black pepper
 1 tbsp Lightly crushed pink pepper (or 1 tbsp of coarsely grounded black pepper)
 2 tbsp Oil
 Salt
Mushroom Sauce
 300 g Mushrooms
 ½ Onion
 1 Garlic clove (minced)
 ½ cup Broth (or water + 1 tbsp soy sauce)
 ½ cup Cream
 1 tsp Worcestershire sauce
 1 tsp Mustard
 2 tbsp Freshly chopped parsley
 1 tbsp Butter
 Salt and pepper
To serve
 Mashed potates, bread, rice

Preheat the oven to 180 Celsius degrees.

Rub pork tenderloin with pepper, salt, and olive oil. Heat a large skillet or pan with a little bit of oil over high heat. When the skillet is smoking hot, brown the pork tenderloin quickly each side.

Transfer the skillet with pork tenderloin to the oven and bake for 18 minutes. If you don't have an oven proof pan, use a baking tray or a baking dish.

While the pork tenderloin is baking, prepare the veggies. Finely chop the onion, slice mushrooms, mince the garlic.

Remove the pork tenderloin on the plate and cover loosely with aluminum foil. Let it rest for 8 minutes.

While the pork is resting, prepare the sauce. Heat the same skillet with 1 tbsp of butter over medium heat. Add chopped onion and cook for 2 minutes. Add garlic, and cook for 1 minute more. Add mushrooms and cook until soft and golden.

Add broth and simmer for 3 minutes.

Add cream, mustard, Worcestershire sauce and simmer for 3 minutes more. Add parsley and season with salt and pepper.

Cut the pork into thick slices. Serve with mushroom sauce and mashed potatoes/bread/rice.
