I used chicken drumsticks, but this recipe works also with bone-in, skin-on chicken thighs.

Chinese Plum Sauce

Chinese plum sauce is a popular ingredient in Chinese cuisine. It’s sweet, sour, and sometimes spicy. It’s made with plums, ginger, vinegar, garlic, soy sauce, and chili.

It’s easy to make at home from scratch if you have fresh, ripe plums. I couldn’t find any in Lima, so I bought my plum sauce in the supermarket. Exactly this one – Lee Kum Kee Plum Sauce.

Here’s the rest of the ingredients for the plum sauce chicken:

  • Hoisin sauce (or five-spice powder).
  • Garlic and ginger
  • Soy sauce
  • Honey (or brown sugar)
  • Chilli flakes (or cayenne pepper)
  • Salt and pepper

Just with these few ingredients you can make the most delicious Chinese-inspired chicken.

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 8 Chicken drumsticks (or 4 large chicken thighs)
 ½ cup Chinese plum sauce
 2 tbsp Hoisin sauce (or 1 teaspoon five-spice powder)
 1 tbsp Rice vinegar
 2 tbsp Honey
 ¼ cup Soy sauce
 3 Garlic cloves (minced)
 1 tsp Ginger (grated)
 Chilli flakes/cayenne pepper (to taste)
 Salt and pepper

Mix all marinade ingredients, add chicken, and marinate for a 1 hour at least.

Preheat the oven to 180 Celsius degrees.

Place chicken with all marinade in a baking dish.

Bake the chicken for 60 minutes. While the chicken is baking, often take it out the chicken from the oven, spoon over the sauce, and transfer back.
