I love soups! And this Polish mushroom soup will truly warm your soul! It tastes the best during cold autumn and winter days. So don’t hesitate, and give it a try! 🙂

Your ingredients checklist

Here’s what goes into this delicious mushrooms soup:

  • Mushrooms – mushrooms shrink a lot when cooked, so feel free to add more! Brown mushrooms are great too!
  • Potatoes, carrot, onion, and garlic – vegetables for the soup.
  • Bay leaves, allspice berries, pepper, and salt – our seasoning.
  • Fresh parsley, dill, and thyme – herbs!
  • Cream or mascarpone – up to you! I love to use both.
  • Butter and olive oil – butter is an essential ingredient here, it adds a lot of flavor! Adding olive oil prevents the butter from burning.
  • Chicken or vegetable broth – I prefer chicken broth, but feel free to use vegetable one if you want to make the soup vegetarian.
  • Cooked egg noodles or bread to serve – any egg noodles or pasta you want! Bread is great too!

Making this soup is very straightforward – cook onion, garlic, and mushrooms, then add the rest of the ingredients, and simmer for 20 minutes! That’s it! It couldn’t be easier, right? 🙂

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 300 g Mushrooms
 300 g Potatoes
 1 Carrot
 1 Onion
 1 Garlic clove (minced)
 1 l Chicken broth (or vegetable broth)
  cup Heavy cream (or mascarpone cheese)
 2 Bay leaves
 2 Allspice berries
 Salt and pepper
 1 tbsp Butter
 1 tsp Olive oil
 Fresh, finely chopped parsley, dill, and optionally thyme (to taste)
 Cooked egg noodles or pasta to serve (or bread)

Wash and chop mushrooms, potatoes, and carrot. Peel and finely chop the onion. Mince the garlic.

Heat a large pot over medium heat with butter and olive oil. Add chopped onion and cook until soft. Then add garlic, mushrooms, bay leaves, and allspice berries. Cook for about 5 minutes.

Add the rest of ingredients - potatoes, carrot, broth, half of the herbs. Season with pepper and salt. Bring to the boil, cover, and simmer for around 20 minutes.

Set aside from the heat, add the rest of chopped herbs and cream (or mascarpone). Mix, taste, and season with salt and pepper if needed.

Serve with noodles (or bread).

    Soup season makes me so happy! This looks amazing! I just made a cream of potato soup and then added tiny meatballs to it as an after thought and it tasted like meatloaf and mashed potatoes in soup form! So good! I must try this recipe. I love mushrooms!
