Make these simple baked eggs for a perfect, seasonal breakfast, brunch, lunch, or a light dinner. Easy and delicious!
Wash and cut potatoes into smaller pieces. Precook potatoes in the salted water. Drain.
Preheat the oven to 180 Celsius degrees.
Heat an oven-proof skillet over medium heat with 2 tbsp of butter and a bit of olive oil (to prevent the butter from burning). Add 3 garlic cloves (whole, no need to peel). Add asparagus. Cook for 3 minutes.
Take the skillet out of the heat. Add potatoes, ham, and season with salt, pepper, and your favorite herbs. Drizzle with olive oil.
Bake in the oven for around 10 minutes.
Take out from the oven, add eggs, and transfer back. Bake until the egg whites are set, but yolks are still running, around 5 minutes.
