Chicken Breast In Tomato Sauce

Quick and easy mid-week dinner idea - one-pan chicken breast in tomato sauce for all tomato lovers! A delicious, flavorful, and healthy meal that you can put together in less than 30 minutes!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 2 Large chicken breasts
 1 Can of chopped/crushed tomatoes (400g)
 ¼ cup Chicken broth (or water)
 1 Small onion
 2 Garlic cloves (minced)
 1 Small bell pepper (optional)
  tsp Dried oregano
  tsp Dried basil
  tsp Dried thyme
 1 tsp Smoked paprika (or regular sweet paprika)
 ¼ tsp Curcuma (optional)
 Salt, Black pepper, Cayenne pepper (to taste)
 Olive oil

Cut chicken breasts into bite-size cubes. Finely chop the onion, mince garlic cloves, chop bell pepper if using.

Heat a large pan with a little bit of olive oil over medium heat. Add onion and cook until soft, stirring every now and then. Then, garlic and cook for a moment.

Add chopped bell pepper if using and fry for 1 minute.

Add cubed chicken breast and season with salt, pepper, paprika, oregano, and curcuma. Cook for around 5 minutes, stirring often.

Add the chopped tomatoes and the broth or water. Bring to boil and simmer over medium-low heat for around 10 minutes, stirring from time to time. Taste and season if necessary.

Serve with rice, bread, potatoes, or pasta!
