This Coconut-Chocolate Chia Pudding with Salted Vegan Caramel tastes exactly like Bounty chocolate bar (even better) but it's dairy and gluten free! It's insanely good and super easy to make! Just gorgeous!

Coconut-Chocolate Chia Pudding with Salted Vegan Caramel

  cup Almond milk
 2 tbsp Chia seeds
 3 tbsp Shredded coconut
 Dark chocolate
 2 tbsp Blueberries
 2 tbsp Coconut salted caramel

In a bowl, mix chia seeds with milk and put it to the fridge. Keep it in the fridge for at least 1h - until the liquid is absorbed. I usually prepare it a night before.

Heat the pan and add shredded coconut. Roast it stirring often. It will take around 1 minutefor sweetened coconut and around 3 minutes for unsweetened one. Be careful to not burn it! Add it to the bowl with chia seeds and milk. Mix.

To serve, chop chocolate and place on top of the chia pudding, add blueberries and 2-3 tablespoons of coconut caramel. I like to add the warm/hot caramel because it melts the chocolate. It's delicious.
