In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

Fajitas
 2 Chicken breasts
 1 Red onion
 3 Bell peppers
Marinade
 ¼ cup fresh orange juice
 ¼ cup lime juice
 2 Garlic cloves (minced)
 1 tsp Smoked paprika
 1 tsp Dried oregano
 1 tsp Cumin
 1 tsp Annatto
 ¼ tsp Cinnamon
 ¼ tsp Chili
 ½ tsp Sugar
 Salt and pepper
 1 tbsp Olive oil
To serve
 Warm tortillas
 Avocado
 Sour cream
 Cheddar
 Tomatoes

Cut the chicken breast into smaller slices. Mix all the marinade ingredients together and add the sliced chicken. Marinade for at least 30 minutes. The more, the better.

Peel and finely slice the onion, deseed and finely slice the peppers.

The best way to make chicken fajitas is to use a cast iron skillet or a grill pan. But don't worry if you don't have such skillet! You can use any pan you have. It'll be great too!

Heat a large cast iron skillet (or any other big pan you have) on medium-high heat with a little bit of olive oil. When the skillet is really hot, add sliced onion and peppers and cook for around 3 minutes.

Add the chicken and fry for further 7 minutes, until the chicken is golden, lightly chargrilled, and cooked through. Stir occasionally.
