Red Wine Marinade (For Chicken, Pork, Steak)

This is such a Delicious Red Wine Marinade - and you can use it for any meat you like! Perfect for chicken, pork, or steak! Made with simple ingredients, it infuses the meat with lots of deep savory flavors and makes it extra juicy! This marinade works the best overnight, but even 1 hour will make a difference!

Meat
 2 Steaks/Small breasts flattened/Pork chops etc.
Marinade
  cup Dry or semi-dry red wine (or 2 tbsp Worcestershire sauce)
 ¼ cup Ketchup (good quality, or passata - tomato purée)
 ¼ cup Soy sauce
 2 Garlic cloves (crushed)
 3 Allspice berries
 1 Spring of fresh rosemary (or 1/2 tsp dried, or other herbs you like)
 1 tbsp Brown sugar (or honey, maple syrup, white sugar)
 1 tbsp Oil
 ½ Onion (roughly chopped)
 1 tbsp Balsamic vinegar (optional - but if skipping the wine, add it)
 3 Juniper berries (optional)
 Black pepper (to taste)

Mix all the marinade ingredients in a big bowl or a zip bag. Add your meat of choice and marinate for at least 1h in the fridge, the best overnight.

Heat a pan over low-medium heat with 1 tbsp of oil. Cook the meat both sides until nicely browned, around 5 minutes each side. If the meat is browning too quickly, lower the heat. Please note that cooking time depends on the type and size of meat.

Turn off the heat and cover the meat with a piece of aluminum foil for 5 minutes. It will release the juices - you can do it in the pan or when transferred on the plate. Up to you!
