Egg Cutlets (Egg patties)

Polish egg cutlets make a delicious lunch or dinner! Easy and quick to make, yummy, and so versatile! Make them your own by adding cheese, ham, or cooked veggies! Serve them with a fresh salad on the side, potatoes, and a dipping sauce! Just delicious!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 5 Hard-boiled eggs
 1 Fresh egg
 1 tbsp Breadcrumbs + more to coat the patties
 1 tsp Mustard
 1 tbsp Finely chopped chives or green onions
 1 tbsp Finely chopped parsley
 Salt and pepper
 Oil or butter for frying

Finely chop or mash cooked eggs and place in a bowl.

Add one fresh egg, mustard, chopped parsley, chopped chives, salt, pepper, and a tablespoon of breadcrumbs. Mix everything together until well combined.

Add a bit (around 1/3 cup) of breadcrumbs into a bowl/plate. Take a portion of the egg mixture and shape a patty and coat in the breadcrumbs. Put on a plate and repeat with the rest of the egg mixture. If you have time, you can chill the patties in the fridge for 1-2 hours. It will make them more firm.

Heat a non-stick pan with a little bit of oil or butter over medium heat.

Cook the patties around 3 3inutes each side - until golden brown.
