Soft and fluffy, these greek yogurt pancakes are worth waking up for!

Wet ingredients
 1 cup Greek yogurt (250 g)
 2 tbsp Sugar
 2 Eggs
 1 tsp Vanilla extract
Dry ingredients
 1 cup Plain, all-purpose flour
 2 tbsp Baking powder

 1 cup Blueberries
 Butter for frying
 Toppings of choice

In a big bowl whisk together eggs with sugar and vanilla extract. Add yogurt and mix again.

Add flour and baking powder and mix again, just until combined.

Add blueberries and mix softly again.

Heat a large non-stick pan over medium heat with 1-2 tbsp of butter. Pour about 1/4 cup of batter (per pancake) and spread it. Cook until there are little bubbles on top of the pancake. Flip and cook for another 2 minutes, until the pancakes are fluffy and cooked through.

Serve warm!
