Greek Yogurt Potato Salad (With Lemon)

This terrific Greek Yogurt Potato Salad with lemon juice and dijon mustard makes a flavorful, bright side dish! Serve warm or cold, and top it with whatever you like - a handful of green onions, chopped parsley, or fried, crunchy bacon! So, so good!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 1 kg Potatoes (eg. waxy, salad type)
 250 g Thick greek yogurt (sugar-free)
 Green onions, chopped (as much as you want)
 Fresh parsley, chopped (as much as you want)
 Fried, crunchy pieces of bacon (as much as you want, optional)
Dressing
 1 Lemon (juice of)
 2 tsp Dijon mustard
 4 tbsp Olive oil
 Salt, black pepper, sugar (to taste)

In a small jar or a mug, mix together dressing ingredients. Try and adjust to taste - add more sugar, salt, or pepper if needed. Set aside.

Wash, cut in half, and cook potatoes until soft in salted water.

Drain potatoes and transfer to the big bowl. Mix with the dressing while still very hot. Set aside. Potatoes will soak all the flavors!

When potatoes are still warm, but not super hot, add half of the greek yogurt, chopped parsley, and green onions, and mix. Then, top with the remaining yogurt, green onions, parsley, and optionally add fried bacon.
