Start with washing the leeks. They’re often very dirty, so be sure to wash them well.
Chop the leeks and chop the garlic. Cut potato into small cubes.
Heat a pot with one tablespoon of butter and a little bit of oil over medium-low heat. Add leeks and garlic, cook until they are sweet and tender.
And potatoes, peas, and broth. Season with salt and pepper. Cover and cook until all veggies are soft, around 20 minutes
Add cream and pesto and cook for 3 minutes.
Blend everything until smooth. Taste and season with more salt and pepper if needed.
