Polish Apple Fritters (Racuchy)

Delicate, fluffy Polish apple fritters - ideal for breakfast, brunch, or as an afternoon snack! Easy and quick to make with a handful of everyday ingredients! Who would say no to these delicious fritters with apple filling that just melts in your mouth?!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

Yeast mixture
 40 g Fresh yeast (room temperature)
 ½ cup Warm milk
 2 tbsp Plain flour
 1 tsp Sugar
Dough
 1 cup Milk
 1 Egg (room temperature)
 3 cups Plain flour
 2 tbsp Sugar
 1 tsp Vanilla extract
 1 pinch Salt
 1 pinch Cinnamon
 1 tbsp Melted butter (or oil)
 2 Apples
Other
 Clarified butter for frying (or oil)
 Powdered sugar to top

In the huge mug or medium bowl, mix together yeast, warm milk, a little bit of sugar and flour. Set it aside for 10 minutes to rise.

In a separate, large bowl, mix together flour, sugar, salt, and cinnamon. Add the yeast mixture, egg, milk, and melted butter. Mix the ingredients together with a wooden spoon or a mixer (suitable for yeast dough) for a few minutes. Then, cover the dough with a clean kitchen towel and set aside to rise for around 40 minutes.

After this time, stir in chopped apples.

Heat a large pan with butter (or oil). It doesn't have to be a lot, but the layer should have around 3-5mm.

Soak a spoon in cold water, then scoop up a portion of the dough and put it in a pan. Fry for about 2 minutes each side over medium heat. The fritters should be golden brown.

Remove from the pan and place on a paper towel.

Sprinkle with powdered sugar before serving!
