In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.
Marinate the meat overnight in spices if possible. If not, even 30 minutes is OK. Mix mustard, vinegar, all the spices and oil in a bowl. Rub the meat with the paste. Put in a plastic container or a zip bag, and marinate.
Take out the meat from the fridge 1 hour before frying. Heat the large pan or pot over medium heat with a little bit of oil. Aggressively brown the meat on both sides. You will need to do it in batches. Set aside.
Lower the heat a bit, add more oil if needed. Add onion and cook until soft, then add garlic and cook for a moment. Add corn starch and mix.
Pour hot water, add meat, allspice berries, juniper berries, bay leaves, and marjoram. Cover and simmer slowly for about 3 hours, or until the meat is tender. Add more water if necessary.
Serve with mashed potatoes or buckwheat and pickles.
