Polish Pancakes (Naleśniki)

Here's a recipe for delicious, soft, buttery Polish Pancakes! Similar to French crepes, Polish pancakes are large, thin, and delicate. Filled with cream cheese and topped with fresh fruits, these gorgeous pancakes are delicious as a breakfast, lunch, or a dessert!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

Pancakes
 1 cup All-purpose flour
 1 cup Milk
 ¾ cup Sparkling water
 2 Eggs
 1 tbsp Sugar
 1 pinch Salt
 3 tbsp Vegetable oil
Filling
 300 g Creem cheese
 5 tbsp Sour cream or greek yogurt
 1 tsp Vanilla extract
 Icing sugar (to taste)
Serving
 Icing sugar
 Fresh fruits

Pancakes

In a big bowl, mix together flour with eggs, milk, water, sugar, and salt, until you have a smooth batter. Add vegetable oil and mix together again. Leave it to rest for 30 minutes.

Heat a non-stick pan over medium heat.

Pour over the portion of batter and move the pan immediately from side to side to form a circle. Cook for 1 minute. Turn over to the other side and cook for a few seconds more.

Filling

In a bowl mix together cream cheese, sour cream/greek yogurt, icing sugar, and vanilla extract. Mix together until well-combined.

Serving

Spread a portion of filling and roll a pancake.

Top with any leftover filling, icing sugar, and fresh seasonal fruits.
