Polish Potato Dumplings (Kopytka), similar to Italian gnocchi, are made with mashed potatoes and flour. The difference is with the toppings!
Boil the potatoes in salted water until tender. Mash potatoes and let them cool down. Then mash again.
Place the potatoes in a bowl. Add flour and egg.
Knead by hand until the ingredients are combined and the dough is formed. The dough shouldn't be super sticky, but it shouldn't be hard either.
Dust a working surface with flour. Transfer the dough to the surface and divide into 4 pieces. Roll each piece into a long cylinder and slice into smaller pieces. Repeat until you use up all the dough.
Bring a large pot of water to boil. Add 1 tbsp of salt.
Add dumplings - don't add too many at the same time, cook them in batches.
When the dumplings start to float on top, cook them for 3 minutes.
Remove dumplings from the water using a slotted spoon.
Serve dumplings right away or follow the next step.
Heat a large pan with 2 tablespoons of butter. Add dumplings and fry until golden.
