Rum Chicken (Jamaican-inspired)

This juicy Jamaican-inspired Rum Chicken is easy to make and so yummy! Made with dark rum, green onions, fresh lime juice, and lots of warming spices, it's super flavorful and aromatic! This gorgeous chicken recipe will shake up your weekly routine!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 1 Whole chicken (spatchcocked and scored)
 A thick slice of cold butter
Marinade
 2 tbsp Dark rum (30 ml)
 3 tbsp Soy sauce
 2 Green onions (finely chopped)
 2 Limes (juice)
 5 Garlic cloves (crushed)
 1 tbsp Fresh ginger (grated)
 1 tsp Chilli flakes (or fresh chilli to taste)
 3 tbsp Brown sugar (or honey)
 1 tsp Ground allspice (or 1 tbs allspice berries)
 ½ tsp Cinnamon
  tsp Ground nutmeg
 1 tsp Dried thyme
 Salt and pepper

Mix all marinade ingredients. Place a spatchcocked and scored chicken in a zip bag or a big bowl. Add marinade and rub all over the chicken. Let it marinate for a few hours at least, the best overnight.

Preheat the oven to 190 Celsius degrees.

Place chicken on a baking tray or dish with all the marinade. Cut the butter into small cubes and place all over the chicken.

Bake the chicken for 60 minutes, spooning the sauce over the chicken from time to time.
