Strawberry Avocado Pomegranate Salad – gorgeous, delicious salad that tastes as good as it looks like! Full of baby spinach, ricotta, and toasted nuts. Drizzled with balsamic dressing for the extra flavor punch! Perfect for a light lunch or as a side dish!

Strawberry Salad with Avocado

Salad
 100 g Baby spinach (or mix of lettuces)
 200 g Strawberries
 ½ Pomegranate (seeds)
 1 Avocado
 60 g Ricotta (or feta, blue cheese)
 3 tbsp Toasted cashews (or other favourite nuts)
Dressing
 4 tbsp Balsamic vinegar
 1 tbsp Lime juice
 1 tbsp Olive oil
 1 tbsp Honey
 1 pinch Salt and pepper

Mix the dressing ingredients together in a small pot. Bring to boil over medium heat and simmer until the sauce reduces by half. Let it cool down.

Prepare salad ingredients. Wash spinach. Finely slice strawberries. Remove seeds from 1/2 of the pomegranate. Cut avocado into cubes.

If doing the salad on separate plates, place a handful of spinach, add strawberries, avocado, and pomegranate. Top with nuts and crumbled cheese. Drizzle with dressing.

If doing the salad in one, big bowl - do it in layers. Place a handful of spinach in a bowl, add 1/3 of strawberries, avocado, and pomegranate, crumbled cheese, nuts and drizzle with a bit of dressing. Then place the handful of spinach again and top with another 1/3 of remaining ingredients. Repeat until all ingredients are used.
