Strawberry Pomegranate Queso Blanco Salad

This light, refreshing salad is just perfect for Spring and Summer days! Sweet strawberries, crunchy pomegranate, refreshing basil leaves, and delicious queso blanco are drizzled with a simple honey-lime dressing. Incredible textures and flavors! An easy, quick, and absolutely delicious breakfast or lunch idea!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

Salad
 1 cup Strawberries
 1 Pomegranate (seeds)
  cup Fresh basil leaves
  cup Baby spinach
 50 g Queso blanco
 1 pinch Black pepper
 2 tbsp Salted nuts
Dressing
 2 tbsp Olive oil
 2 tbsp Honey
 1 tbsp Lime juice

Mix the dressing ingredients together in a bowl/jar/cup. Check the taste and adjust it to your preferences - make it more sweet or sour! Set aside.

In a bowl/plate, mix together strawberries, pomegranate seeds, basil leaves. Add cheese and mix. Add chopped nuts if using. Pour dressing over. Season with a pinch of pepper.
