Spaghetti and meatballs

 500 g Ground beef (or 400 g beef and 100 g pork)
 1 Small onion (grated)
 1 Garlic clove (minced)
 ½ cup Parmesan (freshly grated)
 ¼ cup Breadcrumbs
 ¼ cup Milk
 1 Egg
 1 tbsp Cold water
 1 tsp Paprika powder
 1 pinch Chilli powder
 1 tsp Dried oregano
 1 tsp Dried thyme
 1 tsp Dried basil
1 tsp Dried parsley (or 2 tbsp fresh)
 Salt and pepper
 400 g Passata - tomato purée (or 1 can chopped/crushed tomatoes)
 1 cup Red wine (semi-sweet or semi-dry)
  cup Water
 1 tsp Oregano
 1 tsp Thyme
 1 tsp Basil
 ¼ tsp Cinnamon
 Salt and pepper
To serve
 Fresh parsley (chopped)
 Parmesan (freshly grated)

Grate the onion. Soak breadcrumbs in milk. Grate parmesan.

In a big bowl combine together meat, grated onion, breadcrumbs, minced garlic, herbs, paprika powder, chilli powder, salt, pepper, and a tablespoon of water. Work with the meat until soft and all the ingredients are mixed well.

Using an ice cream scoop and hands form meatballs.

Heat a large non-stick pan, skillet, or pot with a bit of olive oil over medium heat. Brown the meatballs. They shouldn't be fully cooked - just browned nicely. When ready, remove the meatballs from the pan.

Lower slightly the heat. Add to the same pan onion and fry for 2 minutes. Add garlic and fry for 1 minute more.

Add tomatoes, wine, water, herbs, cinnamon. Bring to boil. The sauce should simmer energetically for about 5 minutes, until it starts to thicken slightly.

When the sauce starts to thicken slightly, transfer carefully the meatballs back to the pan with all the juices.

Simmer the sauce with meatballs for about 10 minutes stirring very gently from time to time.

Top the sauce with finely chopped parsley. Serve with cooked pasta or bread and freshly grated parmesan.
