Ritz Cracker Chicken

This is my favorite way to eat chicken breast! The combination of crunchy, butter chicken breast with spaghetti marinara is just amazing! If you haven’t tried Ritz Cracker Chicken yet, cook it tonight! Seriously, just cook it. 🙂

Ritz Cracker Chicken is a chicken breast coated in crushed Ritz crackers and then fried with butter. It sounds super simple, but the flavor is excellent! The meat is tender and juicy, and the coating super crispy.

Why Ritz crackers? They have a rich buttery flavor, and when you combine these crackers with a bit of freshly grated parmesan… WOW! So delicious!

My recipe for the chicken coating is super easy – crush crackers, add freshly grated parmesan, dried herbs, and paprika. That’s it! 🙂

Then, all you need to do is to dip the chicken breast in beaten eggs, crumbs, and cook it with butter! Dinner made simple.

Here’s you Ritz cracker chicken ingredients checklist:

  • Chicken breast – cut in half and lightly pounded.
  • Ritz crackers – crushed. You can use different crackers, just make sure they taste buttery.
  • Parmesan – or grana padano, freshly grated.
  • Butter – don’t replace it with the oil!
  • Seasoning – salt, pepper, paprika, dried herbs.
  • Eggs

PS. You can pair your Ritz cracker chicken with anything you like, it doesn’t have to be spaghetti marinara (although it does taste amazing together!). Cooked veggies, fresh salad, mashed potatoes, rice, or french fries… whatever you like!

Spaghetti Marinara

Marinara sauce is simply a tomato sauce. It’s wildly used in Italian-American cuisine.

I love to make my sauce with fresh tomatoes (when in season), garlic, white onion, and lots of fresh basil. I often add a dash of dry white wine too!

But when tomatoes are not so great, choose tomato passata (puree) or canned tomatoes! Just be sure to choose the best ones you can afford.

You can really tell a difference between cheap canned tomatoes and more expensive ones. Italian brand Mutti Parma is my favorite. The flavor is rich, tomatoes are not watery or sour. Just perfect. It’s quite pricy, but the quality is amazing (you get what you’re paying for), and once you try it, you’ll never go back to other brands! (Un)fortunately. 🙊😂💸

I usually make the marina sauce a few hours (or even a day) before. Then the next day, I cook spaghetti and the chicken! This way I’m not cooking 3 separate things at the same time. But it’s just me. 🙂

Here’s your marina sauce ingredients checklist:

  • Tomatoes – fresh tomatoes when in season, or canned tomatoes/passata.
  • Garlic and onion – basics.
  • Olive oil
  • Fresh basil
  • A dash of white wine – optional.

Ritz Cracker Chicken
 2 Large chicken breasts (cut in half horizontally)
 60 g Ritz crackers (crushed)
 ¼ cup Freshly grated parmesan (as finely as possible)
 1 tsp Sweet paprika powder
 ¼ tsp Favourite dried herbs, eg. basil, thyme, parsley (optional)
 Salt and black pepper, to taste
 1 Eggs (beaten)
 Butter for frying (around 50-100g)
Spaghetti Marinara
 300 g Spaghetti
 800 g Canned tomatoes (or 700g passata), preferrably Mutti brand
 3 Garlic cloves (minced)
 1 Small onion
 1 tsp Sugar (or honey)
 Salt and pepper, to taste
 A handful of fresh basil leaves (chopped)
 Olive oil
 ¼ cup Pasta cooking water

Ritz Cracker Chicken

Place chicken breasts (cut in half horizontally) on a work surface and cover with a sheet of baking paper or foil. Use a meat mallet (or rolling pin) to pound lightly the meat. Don't pound too thin.

Season with salt and pepper.

Place crushed crackers, parmesan, paprika, and herbs in one dish, and beaten eggs in another.

Dip chicken breast into egg shaking off excess. Coat in crushed crackers and parmesan. Transfer to a plate. Repeat with each chicken breast.

Heat butter (with a little bit of oil to prevent burning) in a big pan over medium-low heat. Cook the chicken for around 5 minutes, each side, until golden.

Spaghetti Marinara

Cook the pasta al dente according to the instructions written on the package MINUS 1 minute. The pasta will finish cooking in the sauce. Reserve 1/4 cup of water from cooking the pasta.

Finely chop the onion, mince the garlic.

Heat a large pan/skillet over medium heat with a bit of olive oil. Add chopped onion and minced garlic and cook for 2 minutes, until onion is soft.

Add tomatoes and all the seasoning (fresh basil, salt, pepper, sugar, optionally chili).

Lower the heat and simmer the sauce for 8 minutes, stirring often.

Add cooked pasta and reserved water.

Toss for 1 minute.

    That sounds so good! I use ritz crackers a lot for toppings on all sorts of casseroles but I have never thought to coat my chicken in it. Pinned.
