Simple Tomato Pasta (With Capers)

This is a super simple tomato pasta recipe that’s just perfect for warmer days. It’s light, fresh, yet full of flavor. It’s ready in 15 minutes, and you’ll need just a few ingredients to make it! It’s absolutely delicious served with chilled white wine on a warm, summer evening!

What you need:

  1. Pasta – spaghetti will be the best.
  2. Reserved water from cooking the pasta – to create the sauce.
  3. Tomatoes – you can use fresh tomatoes like I did, or go with canned ones or passata (tomato puree). Up to you!
  4. Capers – I believe that less is more, so I prefer to add just a bit!
  5. Onion, garlic, chilli, salt, pepper, and herbs – to seasons the pasta. Oregano and basil work great here. Parsley will be nice too. Chilli is optional, but recommended!
  6. Olive oil – to create the sauce. Be generous!

You can add parmesan if you want to, but it’s not really needed.

There’s nothing groundbreaking when it comes to making this pasta. Chop the ingredients, fry on the pan, and toss with pasta! Easy!

In all my recipes 1 teaspoon equals 5 ml, 1 tablespoon equals 15 ml, 1 cup equals 250 ml. Spoons and cups are lightly packed.

 180 g Spaghetti
 3 Ripe tomatoes
 2 tsp Capers
 4 Garlic cloves
 ½ Small onion
 ¼ cup Reserved water from cooking pasta
 ¼ tsp Fresh chilli (chopped)
 ½ tsp Dried basil
 ½ tsp Dried oregano
 Salt and pepper
 Olive oil

Bring a large pot of salted water to boil. Add pasta and cook al dente for the time written in the instructions. Drain the pasta, reserving 1/4 cup of the pasta cooking water.

Meanwhile, finely chop chilli and onion, finely slice the garlic. Chop tomatoes and capers.

Heat a large pan over medium heat with 2 tablespoons of olive oil. Add garlic, chilli, and onion. Fry for 3 minutes, until translucent. Add chopped capers. Stir.

Add tomatoes and more olive oil. Season with pepper and herbs. Fry for 5 minutes - stirring from time to time. Add reserved water from cooking pasta, fry for 2 minutes more.

Add pasta. Toss together and simmer for 1 minute. Taste and season with salt, pepper, or herbs if needed.
