Yogurt Cake With White Chocolate And Pink Pepper

This is the cake that my mom is making every summer on repeat! For years. And I know exactly why. This yogurt cake is light, moist, easy and quick to make, and with seasonal fruits just terrific. So if you have some blueberries, peaches or strawberries, feel free to add some before putting the cake into the oven! It’ll be gorgeous!

There’s nothing more comforting than a slice of delicious cake with a cup of coffee!

The version I am sharing today is very simple. I skipped fruits this time, but I topped my yogurt cake with delicious melted white chocolate and lightly crushed pink peppercorns for an unexpected and surprising finish.

And yes, it tastes as good as it looks like! 🙂

Why you should be making this cake already

  1. You can make it your own. It’s a very flexible recipe. Feel free to add some fresh or dry fruits or more lemon zest or poppy seeds. Sprinkle some powdered sugar on top if you like! Don’t like the idea of adding pepper to a cake? Top it with chopped chocolate, nuts, or cranberries.
  2. It’s a simple and quick recipe – you can find all the ingredients in a supermarket and you don’t need any special skills to make this cake. It’s a very forgiving recipe!
  3. This yogurt cake tastes terrific with a cup of coffee or tea. A great way to start a day! 🙂
  4. It can stay fresh up to a week (in an air-proof container). It’s also freezer-friendly.
  5. So rich in flavor!

When are you going to give it a try? 🙂

What you need

You’ll need a few simple ingredients to make this beautiful yogurt cake.

Here’s all you need:

  1. Plain, all-purpose flour and baking powder.
  2. Greek natural yogurt – greek will be the best, but a regular one will do too! I also made this cake with vanilla yogurt, but I highly recommend going with a natural one. Vanilla yogurt has too strong artificial flavor. It’s way better with natural yogurt.
  3. Eggs – 2 whole eggs, and one egg yolk for extra moisture and softness.
  4. White sugar.
  5. Vanilla extract.
  6. A little bit of melted butter. The great thing about using yogurt is that you don’t need to add that much fat to the cake.
  7. Lemon (or lime) zest.
  8. White chocolate and cream – for the topping.
  9. Pink peppercorns – for the topping. Or any other toppings of choice like chopped chocolate, shredded coconut, dried or fresh fruits.

I bet that you have half of these ingredients already in your pantry. 🙂

How to make yogurt cake with white chocolate

This yogurt cake recipe is really easy. Start with mixing the eggs with sugar until light and fluffy. Then, add the rest of the ingredients to the bowl and mix until combined.

Butter a loaf pan or a bundt pan and optionally lay down with a baking paper. Bake for around 40 minutes in 180 Celsius degrees (until a toothpick you insert into the cake, comes out clean). When the cake is baked, let it cool down.

Now it’s time to prepare the white chocolate-yogurt topping. Simply melt the chocolate with a bit of cream and butter, then add a few tablespoons of greek yogurt and mix together. It’s delicious.

When the cake is chilled, pour the chocolate-yogurt topping over the cake and sprinkle with lightly crushed pink peppercorns. A quick tip – the cake can’t be warm. If you pour the topping over the cake while it’s still warm, it’ll soak it all. I know it’s hard to resist, but please please wait until it’s chilled. 🙂

Very inviting. I have come across recipes that use yogurt as a substitute for butter, but this recipe seems unique to use both butter and greek yogurt. Interesting. Will give it a try.
